During the introduction, Francis gives guests an understanding of artisan cider making, then leads them on an exploration of their senses to help them detect varieties, age, and regional characteristics in a range of bottle-fermented ciders. After the introduction, guests compete in a fun challenge, complete with quick-fire quizzes, improvisation, and a healthy serving of humour.
In 2022, Francis began making Single Tree ciders from Wild Weald's native, Malus Sylvestris, apple trees.
